Stilton is made from pasteurized full-fat cow's milk with added starter culture, Penicillium roqueforti, and animal rennet, then pierced after 6 weeks to allow air in and the blue veins to develop. Compared to Roquefort, it is firmer, earthier, and less aggressively pungent — the cow's milk base gives it a more restrained richness and the shorter aging (10–12 weeks typical) produces a balanced rather than overwhelming intensity.
